Homemade Pastis Batch #2 - Initial Maceration

Today I started on my second batch of homemade pastis.

Read about my previous one - stage#1, stage#2, stage#3 and stage#4. I used almost the same recipe as last time. Today's used...

  • 500ml of 96% ethanol
  • 15g star anise
  • 15g aniseed
  • 15g green fennel seeds
  • 20g coriander seeds
  • 5g calamus
  • 5g melissa (lemon balm)
  • 5g liquorice root
  • 5g angelica

  • The main difference, though is that I bought a new grinder for the spices to get them a bit finer than I managed with my mortar and pestel last time.


    The smell of the resulting botanical mix was amazing!


    After a bit of a shake my brew is now macerating for the next 5 days. More anon!
