Homemade Pastis #3

Today I distilled my pastis brew.

The objective was to stop collecting distillate after it falls below 40% ABV and then dilute with filtered water to 50% ABV before adding a second lot of botanicals for the final maceration.

I got my cooling set up sorted first, with a steady trickle of water circulating between reservoir and cooling column.


I had to filter off the botanicals.


There was still some room in the still so I added a bit more vodka. This was probably a mistake as I think it diluted the flavour.


The distillate is clear like, e.g. Ouzo.


I collected 637ml of distillate in total at 66% ABV.


I diluted with an extra 200ml of water to bring that down to 50% ABV.

Then I added some more Star Anise, Green Aniseed and Liquorice.



Back in the jar for a couple of days which will add colour and a bit more flavour before bottling.
