The last stage of my first attempt at making pastis today - bottling.
The macerate had turned brown as expected and I filtered off the second lot of botanicals. I added some sugar and, as I thought the taste a bit weak, added some aniseed essential oil.
And here is the result.
Quite nice after it had settled down. Next time I think I will need to grind the aromatics better and maybe distil without filtering the botanicals off first... and not dilute the whole thing with more vodka to fill my still. But maybe I didn't need to add the aniseed essence as the taste is now quite intense. Overall a result of 7/10, I'd say. I wonder how the taste will change over time? We shall see - I'm not going to drink it all at once!
