Homemade Pastis Stage #2

Today I reached stage #2 of making my homenade pastis.

All I had to do was top up my jar with 1l of filtered water and give it another shake. The next stage, on Thursday, will be to do my distillation run. But before diluting, I thought I'd have a little taste.

Here it is before dilution.


I took a tiny sample.


Slightly murky, but it will become clear when I distil it.


If you remember, my macerate used 96% alcohol, so I diluted it with about 4x the volume of my sample with water.


The taste is good, very aniseedy and very strong. Now to add the water - and here's the result.
