This was yesterday's crop of courgettes from the garden, which included another massive one (I must have missed it when cropping them last week when I also had a large one),
I have a number of recipes I've collected over time from Dawn growing them and having to use them up, but today I found I had a recipe I hadn't tried before.

I cooked it last night and it was delicious. Dawn and Sarah agreed. It is not too spicy and very flavoursome. I served it with basmati rice to soak up the sauce. Furthermore it is vegetarian, so I can try it when Nina comes to visit. Recommended.
