Tassel Pickles - The Latest Batch

Today I labelled the results of my labours in the kitchen from Thursday to Sunday.

Four more jars of pickle onions, two and a half jars of Razorback sauce and three jars of Rainbow pickled chillies.

The  Razorback Sweet Chilli Sauce is an old favourite. This is the recipe:


And here it is being made.

The cherry tomatoes starting to cook.


Cooked and pureed and with the sugar and bag of spices added.


Then the jars are heated in a water bath.


Ready to label.


Now for the little chillies. Here's the recipe.


Some had ripened further since they were picked.


The process of trimming the stalks and slitting each chilli was, erm, a bit tedious.


But here they are all in the jars ready to have the spiced vinegar added....


...and now ready to label.


We'll see what they taste like in 3 weeks or so, but I think they will be quite hot.

Well that's enough pickling for now, but we do have some more chillies to come. More anon.
