Calamondin Marmalade

It's nearly four years since I last tried making this.

(See here for what happened last time). This winter, for the first time, we had an abundance of fruit on our calamondin tree. A couple of days ago Dawn potted the tree on to a bigger pot and harvested the little oranges. This morning I made some marmalade. There was enough fruit not to have to supplement it. I followed a recipe that is no longer online from a printout of the version I had saved 4 years ago.


I didn't count them, but I had about 30 little oranges, although some were quite small. Here they are after halving and squeezing the juice out.


After slicing the peel, I was left with about  210g of peel and 120 ml of juice.


I added them to my pan along with 200ml of water and 350g of jam sugar.


I dissolved the sugar on a low heat and then brought it to a boil.


It didn't take long to set as my sugar had added pectin.


I was left with about 1 2/3 jars of bright orange marmalade.

It is delicious! I'll definitely make this again when we next get a decent crop.
