Spiced Lentil and Butternut Squash Soup

Remembering our lovely holiday in Northumberland last year, today I attempted to recreate the soup we had for lunch at The Ship in Low Newton on our walk from there back to Craster via Dunstanburgh  Castle (see here).

Maybe I should have read my own blog from when I tried to do it before using sweet potatoes (see here). This time I made it from butternut squash with red lentils and some chilli.

This was the recipe I used.


You can find the details of the recipe here, but I omitted the yoghurt and dukkah.

I assembled my ingredients.


I added some sweet red pepper to the recipe, and I also added a chopped Ring of Fire chilli from the freezer.


And here is the resulting soup.


Great comfort food for lunch for the anti-cyclonic gloom - it is nicely warming without being too spicy, and we've got more left for lunches during the week. But it wasn't the right recipe. Maybe I'll do the sweet potato one next time.
