Homemade Pastis Batch #2 - Dilution

It was time for the next step in production of my second pastis batch.

But first I had a little taste.



I added about 4 times the volume of the sample of water - it was, after all, still 96% alcohol. It tasted good with a few earthy notes that will get left behind when I distil it.

Now I added an extra 1 litre of filtered water to the jar. It went cloudy as it was diluted.


A couple more days of maceration and it will be ready to distil. More anon!
