Today I made some home-made chilled gazpacho soup and we had half of it for lunch (saving the other half for Friday when it will be the hottest day).

We had it with some piccolo basil in the middle of the table and just snipped of the leaves we wanted to add.
Along with a bit of home-made bread, it made a great cooling lunch for a hot day.
