The Spicery Thai Meal

I got a rather unusual Christmas present from Laura -  A 3 month subscription to The Spicery. I didn't get a chance to use the initial kit before she went back to Portsmouth, but decided to do it today as a special Twelfth Night meal. "Discover, cook and share the tastiest food you'll ever make", says their web page... and we were not disappointed! I got to make some Bangkok-style  street food - Thai fish cakes and Khao Mok Gai, a Thai version of chicken biryani.

The kit came with no less than 7 sachets of spice mixes and comprehensive instructions. It took a while and lots of bowls, pans and dishes, but the result was very tasty. For the starter we had the fish cakes, with an unusual tomato, coriander and green been salad and a sweet chilli sauce.

Here are the fish cakes ready to cook.

...and the salad...

... and the chilli sauce.

And this is what it looked like on the plate.

Delicious. In fact William liked it so much he had the fourth  fishcake. Then the main course came with a nice coriander and mint dressing.

Amazingly fragrant and tasty! And there's a portion left over for my lunch on Monday. I don't think I'll be using shop-bought pre-made Thai cooking sauces again.

Thanks, Laura. Looking forward to the next one! We'll have to keep it to use for when you are home next!
