After 2 weeks maturing wrapped in a cheesecloth in a container in the fridge I checked out my Cheshire-style cheese.
This is what it looked like...
I tasted it. It has developed a bit of a tang now.
It slices quite easily and fairly soft and creamy in texture. I decided not to risk it going mouldy in the cheesecloth by maturing it longer, so sliced it all up and wrapped each piece in clingfilm....
...leaving a bit for Dawn to taste. Thumbs up from her so I think I count it a being a success. I think I need to get some crackers for us to have some after dinner.
