Emu Egg for Breakfast

On Friday one of Dawn's pupils gave her an emu's egg. A lovely dark green colour - here it is next to a hen's egg and avocado for comparison. But what to do with it?

Make an omelette of course. As it happens, Sarah had come home last night so Dawn and I didn't have to eat it between us. But how do you crack it? Dawn watched a video on the internet and then followed suit, filmed by Sarah.


And so to the omelette...



Adding to  some bacon and red pepper.


And with a bit of cheese on top.


And here it is.


Light and fluffy and delicious!
