Today was my day for distilling my second batch of Absinthe.
Here are a few photos.
I would be adding my column to my still set-up today.
Here is my brew after 10 days macerating.
I drained the liquor from the mash.
The trick is to get the flow level right so there is a steady flow but the cooling coil container doesn't overflow.
My first distillate dripping into my collecting jar.
I measure the %alcohol of each fraction I collect. The first one is 78% abv.
I swap the jars after about 90ml each time.
My complete batch after diluting to 50% abv.
Now to add the botanicals for colouring.
Apart from the liquorice root I am using all fresh this time using the plants I bought recently.
It will get 3 days further maceration before I bottle it. More anon.
