Tassel Cheeses in Action

It's a while since I did this so I thought it about time I made some more cheese. After my walk this morning I called in at Sainsbury's to get some groceries and some unhomogenised Jersey cow milk for the cheese. Today it was to be mozzarella...

The initial collection of curds looked promising.


After a bit of microwaving and kneading  it was getting there.


Then a final round of heating kneading and stretching and it was ready...


...to turn into 5 balls.


Sarah and I had some before it was cold. "Best mozzarella I've ever tasted", she said. That's all right then!
