First Pickled Chillis of the Season

On Sunday I decided it was time to use up the first crop of chillis that had been picked 2 weeks ago.

I decided to just slice and add hot diluted cider vinegar (50:50 vinegar:water) to them in jars along with some allspice berries, black peppercorns, garlic and bay leaves.

Yesterday I printed and added the labels. This is the result:


I called them "Rainbow Pickled Chillies" as they are a mix of colours and there is a range of heat among them.  Just 3 jars, but there are a lot of chillis still to be harvested - and they will need to be harvested soon. I think I know what I'll be doing for a lot of next week! But first, I think need to order some new jars as I've not got many left.
